From Daimon, Hakodate.
Soba by day,
plates by night. All from kombu.

A twelve-seat counter in the Daimon district of Hakodate, six minutes on foot from Hakodate Station. One cook works the kitchen.
Everything starts with ma-kombu from southern Hokkaido. We soak it overnight and draw the stock below a simmer, then layer in dried sardine and squid. Soy sauce is there only for aroma; the salt is decided last.
At lunch we serve shio-soba and nothing else. In the evening the same stock turns into small plates for sake, beer and highballs — a bowl on the way home, without queueing.
Lunch

Ma-kombu
At lunch we serve one bowl: shio-soba.
Ma-kombu is soaked overnight and drawn below a simmer, then joined by dried sardine and squid. Three salts, led by moshio, are measured against how the kombu tastes that morning.
The bowl carries pork chashu, bamboo shoot, green onion and chopped kombu. Shio-soba 1,050 yen; the special 1,480 yen.

About Nagi-no-Shio

"Nagi" is the hour when the wind drops and the sea goes flat; "shio" is the tide. The name comes from the quiet stretch of the morning when the stock is drawing and only steam is moving.
Our owner worked at a Hakodate noodle factory and then at a soba shop before spending time on the kombu beaches of southern Hokkaido, and has bought ma-kombu there since.
Kombu tastes different from day to day, so the stock is tasted once before opening and the salt is set against it. The room is a counter of white tile in a frame of old joinery; the bowls are made by a workshop in the city, shallow enough to drink from.

See the map and hours↓Do you take reservations? No. Twelve counter seats, and guests are seated in the order they arrive.
Anything besides shio-soba?At lunch, shio-soba and kombu-water tsuke-soba. In the evening about eight small plates from the same stock, and shio-soba until we close.
Can we come with children?Yes. Small bowls for sharing and a child-size portion with the noodles cut short. Strollers stay outside the door.
Is takeout available? Not the noodles and soup. We do sell the tsukudani made from the kombu left after the stock is drawn, until the day’s batch runs out.
