The cows are out until mid-October. Everything here is made from milk taken while they are on grass.

ABOUT YUKIFURI FARM

It starts in the grass

The milk from our Jersey cows carries a lot of butterfat, and the taste follows it. From late April to mid-October the cows are on grass, and we milk twice a day, morning and evening.

Questions before you order

The four we always have

Before you order

A poured glass of milk beside a stoppered glass bottle
  • No. It is milk and the culture, nothing else. If it tastes sharp to you, stir in a little honey or jam.

  • There are no flavourings and no stabilisers, so the whey rises when the bottle stands. It has not spoiled. Shake it well before you drink it.

  • The fat globules are left whole, so a layer of cream forms at the neck of the bottle. Stir it in or spoon it off, as you like.

  • Ten days from the day it ships. Keep it below 10°C, and finish an opened bottle within two days.

  • Call or email five days before the next shipment and we stop it from that month. There is no minimum number of deliveries.

The farm year

Cattle grazing on a hilly pastureLate Apr – May

Once the snow is gone and the grass is up, the cows go out. For the first week the milk tastes different every day.

WHAT COMES OUT THEN

Drinking yogurt, plain

A Jersey cow grazing in a meadowJun – Jul

The grass is at its richest. Butterfat rises, and the layer of cream at the neck of the bottle gets thicker.

WHAT COMES OUT THEN

Farm yogurt

A shrub carrying dark blue-purple berriesMid-July

Haskap berries arrive from a field nearby. They are cooked down before they go in, so there are only a few days when we can make this one.

WHAT COMES OUT THEN

Drinking yogurt, haskap

A cow grazing in a summer pastureAug – Sep

In a run of hot days the cows stay in the shade and the yield drops a little. That week we ship only the morning milking.

Round hay bales standing in a cut fieldOctober

The end of grazing. On the day the cows come back in, we make the last batch of the season from grass-fed milk.

WHAT COMES OUT THEN

Farm yogurt

Once they are on hay the milk turns lighter. This is when we make most of the cottage cheese.

WHAT COMES OUT THEN

Cottage cheese

We make only what came out of the pail that morning, on the same day.
