Our seasons

What we can put in a bowl changes with the buying and the curing. Ask in the shop for what is on that day.

The lights of a fishing boat on a dark sea

We cure the roe in autumn

September–November

Through the autumn we buy raw roe sacs, separate the eggs by hand and cure them in soy sauce. We freeze what we cure, so ikura-don is on the list all year.

Sea urchin served in the shell

Uni-don is a summer bowl

June–August

We serve uni-don only through the summer. On days when no urchin comes in we take it off the list, so please call in the morning to ask.
